Tasting Notes
In color it shows some evolution to a golden yellow, however bright and attractive, visually completed by a very fine and persistent bubble; Good aromatic intensity but delicate and of great freshness, notes of white fruit and slight brioche, some dried fruits, giving a good aromatic richness; Dry wine with good acidity, good structure and at the same time creamy due to its long ageing on fine lees, good wrapping of the “mousse”, all in great balance ending in a smooth and prolonged finish.
Vinification
Light pressing, using only the first drain from the press. Cold decanting, alcoholic fermentation at 14-15°C for 15 days. After this it was kept in batonnage on fine lees for 6 months. Inoculated and fermented in bottle according to the classic foaming method. Aged in bottle on lees for 45 months.
