Viticulture
The clay loam soils where it is planted allow the Arinto variety to display its attributes. This balance between quantity and quality, together with a mild climate, has made it possible to obtain a raw material of excellence.
Tasting Notes
With a cloudy appearance and greenish-yellow color, it is clear that it is an unfiltered wine. In the aroma of araçá and lime, with an elegant minerality and notes of brioche and pastry. In the mouth it is a wine with vibrant and mineral acidity . With a remarkable texture, long and saline finish.
Vinification
Manual harvest, cooling of the grapes in a cold room. At low temperature, the grapes are carefully pressed into whole bunches, and only the first must is used for this wine. Fermentation took place in cement “tulip” followed by an aging on fine lees for 5 months. The wine has not been filtered or stabilized before being bottled, so it has all the natural sediments resulting from fermentation.
