Tasting Notes
On the nose, stone and orchard fruits abound, with a moist core and white pepper over the dominant aromas. On the palate, it’s impressively bright and mineral, with a great balance of power and lift. Lemon, green apple and pear flavours blend with a touch of floral and mineral slate tones. It is a juicy and mineral wine at the same time.
Vinification
Before pressing, the grapes were crushed and destemmed, the pressing is done without prior maceration, the wine was decanted at low temperature for 24 hours, the fermentation of the indigenous yeasts and aging took place in used French oak barrels of 228 and 500 liters, 30% of the wine fermented and aged in stainless steel.
