Tasting Notes
Bright yellow. It reveals a citrus profile, lemon peel and floral notes, with emphasis on orange blossom. Good balance of acidity with a long and persistent finish. Serve at a temperature between 10 and 12°C. Ideal to accompany fish dishes in the oven, rice dishes with broth and game meat stews.
Vinification
Manual harvest, selected for 15 kg boxes. Total destemming and crushing. Static cold decantation, followed by fermentation in stainless steel vats at a temperature of 14° – 16ºC. Subsequent ageing on fine lees, in stainless steel vats until bottling.
