Vinification
Manual harvest, grapes transported in 20kg boxes to the winery, where the bunches, whole, are subjected to a gentle pressing, in order to obtain a must of superior quality. Fermented with indigenous yeasts, without the addition of sulfur, and at low temperatures (12-14C) in stainless steel tanks.
Aging
Bottled after 6 months in stainless steel vats to capture the aromatic potential. Launched with 6 months in bottle to allow a small evolution of the wine before reaching the market.
Tasting Notes
A dry Riesling with excellent minerality and vibrant aromas of lime, grapefruit and pear. Lively acidity with a beautiful purity of fruit. Persistent aftertaste with a magnificent ageing capacity. The green and citrus fruits gain opulence and slide into stone fruit aromas and flavors the longer they age in the bottle.

Gastronomy: Sublime with Asian cuisine, either with slightly spicy dishes, since the sweetness of the Riesling fruit balances the heat of the spices, or with raw fish; sushi and salmon gravlax. A natural pairing with Portuguese octopus dishes, such as octopus à lagareiro and suckling pig with black pepper sauce, in which the wine cuts well the olive oil and the fatty elements.
