An authentic Chardonnay from the Trevelin Valley (IG), the new Geographical Indication of Argentine Patagonia. The extremely cold climate marks the unique character of this excellent white wine. The temperature range between day and night concentrates the aromas and flavours of this Chardonnay, without malolactic fermentation and without passing through barrels. The grapes come from our own vineyards, cultivated organically, with low yields, respecting the harmony and longevity of each plant. At an altitude of 330 meters above sea level. Cold weather, with frosts at the beginning and end of the season, although the 2021 harvest was characterized by warmer and drier weather, with many hours of daylight, records of higher temperatures than historical and less frost, allowing you to harvest grapes balanced between alcohol potential, acidity and pH. We use sprinkler irrigation to protect the vines. Soil with good drainage and sandy loam structure, organic matter on the surface and deep riverbed with sand and stone. Royat twin-strand driving system. Drip irrigation system. Harvested in April 2021 by hand, in 12 kg boxes. The selection of bunches is done on the plant before going to the cellar.
Vinification
Made in stainless steel tanks, fermentation at controlled temperature at 15°C, without malolactic and without passing through barrels.
