A product of the limestone terroir of Bairrada, this wine uniquely expresses the characteristics of the soil from which it comes. Coming from native grape varieties and centenary vineyards planted in poor and stony soils, where the raw material is scarce but extremely precious, it is produced in total commitment to nature. In the end, we get a wine without masks, authentic, structured, elegant and complex, full of individuality and character.
Tasting Notes
Complex and delicate aromas of ripe citrus and floral fruits, reminiscent of orange blossom and lime. Notes of vanilla, spices and hard character add aromatic complexity. On the palate it is an elegant wine, full of minerality and freshness, reflecting the calcareous soils from which it comes. It is simultaneously a deep, structured and complex wine, with a long and persistent finish. It pairs well with oysters, cod and various types of cheese.
Vinification
The grapes were pressed into whole bunches and the resulting must was fermented in seasoned oak barrels, followed by regular batonage until the bottling date. Natural tartaric and protein stability achieved during 10 months of barrel ageing.
