Originating in Bairrada, between the foothills of Serra do Buçaco and the sea, Giz is born, a wine that expresses in a unique way the characteristics of the limestone soils from which it comes. Coming from old vines, from indigenous grape varieties planted in poor and stony soils, the raw material here is scarce, but extremely precious. Produced in total commitment to nature, the intervention in the natural process is minimal, both in the vineyard and in the winery. In the end we obtain a wine without masks, authentic, structured, elegant and complex, full of individuality and character.
Tasting Notes
Citrus and floral aromas, reminiscent of orange blossom, orange peel and quince. Hints of spice and beeswax add aromatic complexity. In the mouth it proves to be an elegant wine, full of minerality and freshness, reflecting well the limestone soils from which it comes. It is simultaneously a deep, structured and complex wine, the result of the perfect maturation of the grapes at harvest and the long aging in barrels.
Vinification
Grape destemmed and fermented in lagar with complete tanning. FML and aging in used barrels, followed by punctual batonnage until the bottling date. Tartaric and protein stabilization achieved naturally during prolonged aging of 10 months in barrels.
