Vale dos Vinhedos, located in Serra Gaúcha, is the first wine region with a Designation of Origin in Brazil. Deep soils, a temperature range of 12°C between day and night and an average temperature of 17°C, make this the terroir of excellence in Brazil for the cultivation of the Chardonnay variety.
Vinification
After the final selection of the bunches and the destemming of the fresh grapes, a pre-fermentative cold maceration was carried out for 10 hours. This was followed by a discontinuous and delicate pressing, in a press with an inert atmosphere, and the clarification of the must. Alcoholic fermentation took place with selected yeasts Saccharomyces cerevisiae, at controlled temperatures between 14ºC and 16ºC, later completing the aging in barrels. The wine matured on fine lees for 12 months in first-year French oak foudres, with a capacity of 2,500 L and medium toast, and in 228 L French Burgundy-type barrels, also with medium toast. After tartaric stabilization and filtration, it was bottled, remaining in bottle aging for 12 months, preserving complexity, elegance and freshness.
Tasting Notes
It is clear and bright, with a straw-yellow color and greenish reflections. In the aroma, it is fascinating and enveloping, with intense notes of tropical and ripe fruits, such as pineapple and star fruit, surrounded by subtle nuances of white chocolate and vanilla, the result of the combination of French oak barrels and foudres, giving complexity and sophistication. In the mouth, it is voluminous and powerful, revealing all its vigor and character, balanced by a fine acidity. The aftertaste refers to the same aromatic profile, with ripe fruits and elegant notes of wood, extending into a long and persistent finish.
