Manual harvesting and selection of grapes; gentle pressing and clarification of the must by natural sedimentation; Slow fermentation at a controlled temperature in stainless steel tanks, aging on the lees in steel tanks for 6-7 months.
Tasting Notes
Light yellow in colour and clear with a slight greenish glow. On the nose, this classic Pinot Bianco features crisp notes of apple and pear, mixed with aromas of raspberry and lime, as well as a touch of chamomile and lemon balm to complete the composition. On the palate, the body and balance sum up the Pinot Bianco, which intrigues the palate with the fruit of the notes of pear and quince combined with a salty minerality. The wine caresses the tongue and offers a lingering aftertaste. A good accompaniment to starters such as salmon and tuna carpaccio; zucchini flowers with stracchino cheese or combined with burrata; avocado salad; regional dishes such as spinach spaetzle or schlutzkrapfen; also in combination with spaghetti carbonara; scallops au gratin and grilled fish such as sea bream.
