Tasting Notes
Bright straw yellow with golden highlights. Fruity, persistent and pleasantly floral bouquet, reminiscent of wildflowers and peach blossoms. Intense, structured, enveloping, with a stimulating smoothness and a balanced acidity that gives it varietal notes, with a long and intense finish with marked exotic and citrus notes. It goes well with fish, seafood, soups and white meats.
Vinification
Initial destemming (separation of the berry from the stem) and subsequent gentle pressing (separation of the must from the grape skin). Decanting with consequent clarification of the must that ferments at a controlled temperature of 16°-18°. Subsequently, the wine is aged on the lees through frequent batonnage for a few months.
