Tasting Notes
Intense, mineral aroma, in balance with elegant notes of white flowers, citrus aromas, grapefruit and lime, together with aromas of pulpy fruits. Vibrant acidity, with volume and great aging potential
Vinification
Manual harvest, crushing without destemming the bunch. Fermentation in stainless steel vats with indigenous yeasts.
Aging
Aging with agitation of the lees – “batonnage” until bottling at the end of January, followed by 3 months of aging in bottle
