Tasting Notes
Appealing aroma with notes of ripe citrus fruits, complexed with slight nuances of the vats where it fermented and aged, and a pleasant volcanic sulphur. In the mouth it has a vibrant acidity and minerality. Very enveloping volume and long persistence finishing saline. It pairs well with seafood, cheeses, fish and sushi.
Vinification
Made from a selection of Arinto from the Azores from old vines in the Criação Velha area. After careful selection of the grapes, fermentation took place in wooden vats (67%), in 500 liter oak barrels (7%) and stainless steel tank (26%) at a controlled temperature of 15 ºC. It aged on the fine lees for 8 months after which the wine was bottled.
