Tasting Notes
Delicate and fine aroma with slight toast, light smoky nuances and almond surrounded by complementary fruit notes. In the mouth it has a serious, gastronomic and tense profile, the beautiful acidity gives it lightness and extension. Stone fruit with soft buttery notes, with a creamy texture and lively acidity in balance. It pairs well with fish, seafood and poultry and white meats. Smoked fish, cod and foie-gras dishes, as well as strong, creamy cheeses
Vinification
Manual harvest in 18kg boxes, followed by gentle pressing after a short maceration. Fermentation in used French oak barrels. Aged for 24 months on the lees, in used French oak barrels with “batonnâge”
