Tasting Notes
Elegant aroma dominated by stone fruit, with notes of peach and apricot combined with light smoky notes, with minerality. In the mouth it is ample, voluminous and textured, with creaminess in balance with the surrounding acidity . Pairs well with fish, seafood, poultry and white meats. Smoked fish, cod and foie-gras dishes, as well as strong, creamy cheeses
Vinification
Manual harvest in 18kg boxes, followed by gentle pressing after a short maceration. Fermentation in used French oak barrels. Ageing for 6 months on the lees, in used French oak barrels with “batonnâge”
