This title contains the entire history of Vranken’s Champagnes Demoiselle, the latest revolution in Champagne with regard to quality and oenology, but above all in terms of taste.
Viticulture
This phrase sums up all the specific work carried out by the Champagne Vranken teams during the harvest. First of all, the quality of the grapes must be impeccable and the selection of the raw must be rigorous. The grapes from the Vranken vineyards constitute a solid basis for developing the Demoiselle ‘Tête de Cuvée’, based on the impressive geographical distribution of the selected crus, as well as the certifications that our vineyard received in 2014: ‘sustainable viticulture in Champagne’ and ‘great environmental value’. First-choice (or grade A) grapes are harvested at optimal maturity and then taken to the mill with a minimum of time before pressing.
Vinification
The grapes are pressed according to the qualitative pressing principles of Champagne and the ‘Tête de Cuvée’ specifications. Full traceability of each press is critical to confirm compliance with specifications and record technical information related to the pressing process.
To extract the purest juice that will give our cuvée all its delicacy and elegance, we focus on the principle of fractionation: only the first two ‘presses’ (15 hectoliters of wort per 4,000 kg of bagasse) of the pressing cycle are used in the ‘Tête de Cuvée’. This is a key element in ensuring quality.
Enveloped in the most subtle aromas, this juice is richer in sugar and acid, which gives maturity and freshness to our wines and gives them a remarkable freshness in the mouth, suitable for aging. After pressing, in the cellar, we ensure maximum separation of the qualities and raw in order to have the widest possible reach during assembly.
Tasting Notes
Colour: Pale golden colour, characteristic of Chardonnay, is accentuated by green and white crystalline shimmers. With excellent clarity, this cuvée is characterized by its incredibly fine bubbles and persistent foam thread.
Nose: Delicate and extremely elegant. The citrus aromas (lemon, grapefruit) stand out among a wide variety of notes. They are moderated by notes of small fruits (apricot) and white flowers. The nose opens to reveal notes of ripeness (brioche, honey) that reveal all its complexity.
Flavor: The attack is bold. The sensations grow. A perfect balance and incredible freshness add aromatic complexity to your perfume. The mid-palate is direct, brimming with subtlety and elegance. A light and ethereal wine with an impressive length. The finish is precise and leaves the taster with a delicate lemon note characteristic of this couvée.
