Vineyards
We are in the heart of the so-called Lower Friuli Plain, which extends in an area between the Livenza River (to the west) and the Isonzo River (to the east) and between the upwellings and the sea. After impressive restoration works dating from the beginning of the twentieth century, the area is now richly cultivated. The silty-sandy and silty-clayey subsoil is conducive to the cultivation of vines, which finds in the fertility and salinity of the soil a fundamental characteristic for the aromaticity of the wines.
Vinification
After mechanical harvesting, the grapes are cooled to preserve their characteristic aromas. This is followed by gentle pressing and the addition of selected yeasts for the first fermentation at a controlled temperature of 10-12°C. The second fermentation takes place in pressure tanks for at least 90 days to allow the yeasts to work properly and create a subtle perlage. We proceed with cold stabilization and filtration. The sparkling wine is then bottled and packaged.
Tasting Notes
Straw yellow with greenish reflections. On the nose there are crisp notes of green apple and fresh Mediterranean aroma. The low residual sugar content favors a fresh drink with a balanced taste and persistence. Excellent aperitif wine, to be enjoyed also during the meal, thanks to its structure and aromas capable of accompanying elaborate dishes. Enjoy it accompanied by a rice cake with pumpkin and sweet gorgonzola. For vegan pairings, choose a savory pie with zucchini and béchamel.
