Vinification
The grapes are harvested by hand and pressed very gently. After fermentation in a tank with wild yeasts, we do a second fermentation in the bottle – classic method. The grapes for sparkling wines are harvested in different locations. The harvest begins as early as August to maintain the fresh and fruity character of the grapes. In this way, we always maintain the natural acidity that we appreciate so much. The first fermentation begins with the natural yeasts of the grapes. No shots are added, so the wine remains dry.
Tasting Notes
This wine has a light straw-yellow hue and fine bubbles. On the nose, it stands out for its minerality and fruity touch of pears and fennel, with nuances of thyme and honey over time. On the palate, it is refined and creamy, with a minerality present. The flavor is dominated by fruit, with a dry and refreshing finish.

Gastronomic Accompaniments: It is an excellent companion for a conversation with friends, even without a meal. It works great with simply cooked seafood, poultry, salads and hard cheeses (Comté, Emmental, Gruyère, Parmesan, Cheese from the Island of São Jorge).
