Vinification
The grapes are harvested in different locations. The harvest begins in August to maintain the freshness and fruitiness of the grapes. The first fermentation begins with the natural yeast of the grapes. Traditional method, second fermentation in the bottle, unfiltered to maintain the maximum natural flavors and maintain the quality of the bubbles in the wine. There is no dosage made, so the wines remain dry.
Tasting Notes
Rosé colour, clear salmon with fine bubbles. The nose is very expressive with notes of strawberry, pomegranate and fennel. The palate is refined, creamy, relatively smooth and has a very present minerality. The mid-palate is fruity and the aftertaste is dry and refreshing.
