Vinification
1st Fermentation: The grapes are exclusively transported in 20 kg boxes and pressed whole after a short skin maceration to obtain a high quality must. The wort is clarified at 12ºC for 48 hours and fermented at controlled temperature for 12-15 days.
2nd Fermentation: Fermentation in bottle, minimum aging of 24 months with manual remitting followed by disgorgement and new aging of minimum 3 months.
Tasting Notes
Fine and persistent bubble, markedly grape variety and complex aroma. Full-bodied, dry with lemony acidity , with a persistent finish to the fruit standing out from the grape variety.
