Tasting Notes
Greenish with very fine and persistent bubbles. The citrus notes are wrapped in some baking resulting from aging in the bottle with the yeasts free. In the tasting the bubble is very elegant, balancing and involving the very refreshing natural acidity that the wine has. It ends long and persistent. Ideal with appetizers or seafood, grilled fish.
Vinification
Manual harvest and the grapes were pressed with a whole bunch and only the tear was used for this sparkling wine. It fermented in clay amphora and aged for 1 year until it was bottled. The second fermentation was done in bottle by the classic method for 7 weeks at a temperature of 12 ºC. Degorgement was done in May 2024.
