Tasting Notes
With the discreet fruit leaving room for the notes of biscuit and fresh herbs, excellent freshness and a dry and wide finish, asking for food.
Vinification
It is vinified with an open spout, and the must is placed in small 1m³ decanters where it remains between 24 and 36 hours to make the decantation through natural precipitation. At the end of this process, the wort is transferred to stainless steel tanks where it ferments, with a temperature control made with chilled water dropping. Special care is taken to harvest grapes that have the correct balance between acidity and alcohol. The base wine is usually sparkling in March of the following year. It is a traditional sparkling method, fermented in a bottle. Being a natural brut, it does not have any added sugar in the expedition liquor.
