Viticulture
The clay loam soils where it is planted allow the Pinot Noir variety to display its attributes. In 2019, we obtained an average productivity of 6.7 Ton/HA. This balance between quantity and quality, together with a mild climate, has made it possible to obtain a raw material of excellence. The Pinot Noir variety originates from lands with colder climates and has found in our terroir the conditions that allow it to express two of its main characteristics: freshness and elegance.
Tasting Notes
Open pinkish color. Predominantly fruity aroma with notes of grapefruit, raspberries and fresh watermelon. In the mouth it is smooth, with volume, showing a balanced and refreshing acidity . The finish is long and saline.
Vinification
Manual harvesting. Grapes are pressed into whole bunches. Fermentation took place in a stainless steel tank. Aging for 6 months in the same stainless steel vats, on the fine lees.

Gastronomy: Very versatile, being a great option to accompany starters such as pumpkin soup, hummus or beef carpaccio, barnacles or mussels Spanish style. Experiment with Indian or Nepalese cuisine. It should be served chilled at a temperature of 10ºC.
