Tasting Notes
Clear wine, pale salmon color. Aromas of raspberry, blackcurrant, pomegranate, floral notes and subtle barrel toast. Fresh, fruity, mineral and dry with an elegant and persistent aftertaste. It goes well with salads, pastas, pizzas, sushi and white meats. It should be served at a temperature of 10-12⁰C
Viticulture
Vineyards installed in red soils derived from brown or crystalline limestones, with patches of schist, benefiting from a Mediterranean climate with high thermal amplitudes and hot and dry summers. After the green interventions, necessary during the vegetative cycle, the grapes were harvested by hand and transported to the winery in boxes.
Vinification
After destemming and crushing, the grapes are pressed in a pneumatic press with oxidation protection. Static decanting for 48 hours. Alcoholic fermentation of part of the must in 3rd year French oak barrels and the rest in stainless steel vats with temperature control
Aging
Once the alcoholic fermentation is completed, the wine ages “sur lie” in stainless steel vats and oak barrels with batonnage for three months.
