Vinification
Direct pressing of the grapes, without destemming. After pressing, the must is removed at low temperatures for 3 days, followed by static decanting for 24 hours. Alcoholic and malolactic fermentations take place mainly in stainless steel vats, fermenting a small part of the musts in used French oak barrels.
