Tasting Notes
Slight pinkish. With a discreet and very elegant aroma, it shows different characteristics throughout the tasting. In the first approach it is dominated by gunpowder and wild berries, followed by charming notes of clay in the background, which give a unique character to this wine. Of a rare elegance, it is a vibrant but very smooth wine with a medium-long finish. Ideal with appetizers or accompanying salads, Asian food or grilled fish and truffles. It should be served between 8 – 10 ºC temperature.
Vinification
Manual harvest for 15 kg boxes and press with whole bunch. Fermentation for 23 days at 16 ºC in terracotta amphorae. Aging on the fine lees in the same 750 liter amphorae for 9 months.
