Vinification
Piecemeal work (several different plots of Syrah) from the harvest to the end of the barrel ageing. Manual harvesting, with picking and destemming without crushing. Fermentation in stainless steel vats with foot treading reproduction and temperature control (individual per vat). Average yield per plot: 5 tons/ha.
Aging
16 months in French oak barrels.
