Coming from a small plot (0.24 ha) at the top of Monte d’Oiro, next to the oak forest and overlooking the Montejunto mountains, this is the first edition of our Cabernet Franc, a personal choice of producer José Bento dos Santos.
Vinification
Manual harvest., by individualized parcel. Choice of bunches and partial destemming without crushing. Fermentation in stainless steel vats with foot treading reproduction and temperature control (individual per vat). Prolonged maceration.
Aging
18 months in French oak barrels
Tasting Notes
A very precise, bright wine, of great finesse and elegance. On the nose, you can see the fruits of the forest such as wild strawberries, but also the evident vegetal aromas so characteristic of the variety (peppers, herbs). In the mouth it is rich, mineral (limestone), beautiful acidity and salinity that give it freshness, good depth on the palate. An aristocratic and incredibly gastronomic wine.
