Tasting Notes
A refined aroma full of character, with captivating notes of berries, delicate spices and fresh herbs. In the mouth, it is extremely expressive, with prolonged persistence and a striking presence.
Vinification
For the production of wine, the grapes are fermented for 5 to 8 days in an open lagar and without destemming (the berries are not removed from the bunch). Then, a reassembly is done with wood masses, several times a day, until they reach the correct intensity. Then, the wine finishes fermentation in old wooden barrels. While it rests, it is cleaned and ages in the same barrels for about 18 months. It is bottled without any fining or filtering. All these processes are done manually.
