Viticulture
Vineyards installed in red soils derived from brown or crystalline limestones, with patches of schist, benefiting from a Mediterranean climate with high thermal amplitudes and hot and dry summers. After the necessary green interventions during the vegetative cycle, the grapes were mechanically harvested at the optimum point of ripeness.
Vinification
After reception by grape variety, the grapes are destemmed and crushed, followed by pre-fermentative maceration. Fermentation takes place in temperature-controlled stainless steel vats.
