Vinification
The grapes came from a single plot with older vines (50 years old on average) whose vines were planted in the old-fashioned Dão way. There are ten different Portuguese grape varieties, typical of the region, all mixed, which conditioned the winemaking together, as they were in the vineyard. The harvest is done by hand and the grapes are transported to the winery in small boxes. After manual selection of bunches and destemming, the grapes are crushed by treading in granite lagares, where fermentation also takes place. The maceration takes place in a delicate way to enhance all the typicity of these native grape varieties, privileging the extraction of fresh fruit and tannins.
Aged for 6 months in French oak barrels of third use and the remaining time in stainless steel. Before bottling, a slight clarification is made (with products of vegetable origin) and then filtration in order to maintain all its aromatic potential and structure. The stabilization and most of the clarification is natural. Small sediments may appear during the aging in the bottle. It does not contain animal products.
Tasting Notes
Intense ruby colour with aromas of red fruits and ripe fruit, associated with floral and wild notes. Spicy and balsamic notes. The pleasing variety of grape varieties also contributes to a wide variety of aromas. Full-bodied wine, with volume and a natural acidity , freshness and mineral character well present. Prolonged and intense finish, revealing great complexity of aromas in the mouth.
