Vinification
The grapes for this wine were destemmed and crushed into the tank where it fermented, spontaneously without temperature control. In order to avoid too much extraction, it was pressed early and completed alcoholic and malolactic fermentation before being racked in used French oak barrels. It aged for 12 months before being blended and bottled without
bonding or filtration.
Author’s Note
With this project I intend to study and express the full potential of the native Portuguese grape varieties. I look for genuine and soulful wines that unequivocally express the origin and interpretation I make of it.
