Vinification
Grapes picked by hand into small boxes and transported to the winery where they were destemmed and gently crushed. Cold maceration for 72 hours and start of spontaneous fermentation with temperature control. Daily “délestage” and pumping over with aeration for better color fixation and integration of aromas. Malolactic fermentation takes place during the 2-year aging in French and American oak barrels.
Tasting Notes
Deep and concentrated color. Aromas of black fruit and notes of cocoa. Wide mouth with persistence and long finish. It goes well with game dishes. Serve at a temperature of 18ºC.

Climate: Strong continental influence and being the highest mountain range south of the Tagus River has 2 very distinct climates. In the north-facing area it is quite windy and cool, however on the south-facing slopes it has a very high temperature range in summer with extremely hot days and cool nights, allowing a balanced ripening of the grapes.
Soil: Poor and of granitic origin with a lot of stony, deep and with a high slope.
