Tasting Notes
Colour: citrine yellow. Intense fruity aroma of lime, reineta apple, vanilla and rose petals. Elegant structure well balanced with a fresh acidity; Fresh and mineral long finish.
Vinification
From the best plots of Quinta da Carregosa, the grapes were harvested manually in the plots that showed a more balanced ripeness. After careful selection and manual harvesting, the grapes are subjected to crushing and total destemming. This is followed by a period of 48 hours of skin maceration at 10ºC to maximize the action of the grape enzymes responsible for the extraction of aromas. Cold defecation at 7ºC for 48 hours. Selected yeasts are used to induce alcoholic fermentation that takes place between 12ºC and 15ºC for a minimum of 30 days. Part of the wine blend was transferred to new French oak barrels where it remained for 4 months. After bottling, the wine aged in the bottle for 2 months before being marketed.
