Tasting Notes
Intense red color with bluish reflections. Very complex aroma with notes of blue fruits, black cherry, spices – black pepper and cloves. It is of great volume, concentrated, good balance between alcohol, structure and acidity; Firm texture, wide structure, very long finish, precise and with great aromatic and physical persistence.
Vinification
From the best plots of Quinta da Carregosa, the grapes were harvested manually in the plots that showed a more balanced ripeness. The grapes are subjected to crushing and destemming completely. This is followed by a 24-hour period of pre-fermentative maceration at 30ºC to maximize the action of the grape enzymes responsible for extracting color and aromas. Selected yeasts are used to induce alcoholic fermentation that takes place between 22ºC and 24ºC for a minimum of 10 days. Induced malolactic fermentation with temperature control. Once the malolactic fermentation was completed, the wine was transferred to 500 liter French oak barrels where it remained for 12 months. After bottling, the wine aged in the bottle for 6 months before being marketed.
