Pardusco was the name given to red wines with little color, moderate alcohol content and that traveled well, that is, aged well. At the time they did not yet have the designation of Vinho Verde and later, to distinguish themselves from them, they called it “mature wine of Monção”.
Vinification
Manual harvesting in a perfect state of ripeness. Total destemming and cold skin maceration. Long and controlled fermentation at low temperatures. Malolactic fermentation done in its entirety.
Tasting Notes
Open ruby colour. Aromas of ripe red fruit and light spices. In the mouth it presents a vibrant but balanced acidity . Mineral touch conveys freshness and structure.
