Vinification
The grapes used to produce this wine come from our own vineyards over 16 years old in Luján de Cuyo (First Wine Zone, with Designation of Origin for Malbec), Mendoza, Argentina, on the same property where our winery is located. The vineyards are located at an altitude of 900 meters, with drip irrigation of the meltwater of the Andes mountains. Once in the cellar, they are selected by bunches and berries. Cold maceration (pre-maceration) at 10ºC for 48-72 hours. Fermentation in stainless steel tanks with individual temperature control. 15 to 20 days. Fermentation is carried out with selected yeasts at temperatures between 20° and 26°C, alternating between pumping over and “delestage” to obtain the best quality of tannins. Malolactic fermentation of 20 to 30 days. Ageing in French (J.F. Cooper) and American (Kelvin) barrels for first and second use for 6 months. Subsequently, it remains in the cellar for a minimum of 6 months.
Tasting Notes
Intense red in color. Aromas of red fruits, highlighting cherry and strawberry, roasted coffee bean, spices, vanilla and a light touch of cloves, notes of oak. Good palate with medium structure, firm, smooth tannins and good balance. Long, warm aftertaste. Decant and serve at 16°-18ºC.
