Of excellent creaminess, with fine and persistent perlage, the sparkling wine results not only from the selection of the best Chardonnay and Pinot Noir grapes from Vale dos Vinhedos, but also from the evolution in the silence and darkness of the underground cellars for five years.
Vinification
Meticulous care begins with the final selection of the curls, carefully chosen to ensure exceptional quality. The direct pressing of fresh grapes is carried out by a press with an inert atmosphere, ensuring the integrity of the must. The separation of the flower must, representing 50% of the production, is followed by careful clarification. The use of selected yeasts initiates a controlled alcoholic fermentation at 15º to 16ºC. Oak maturation, particularly in Chardonnay, takes place over 12 months, enriching 10% of the total volume. The crucial assemblage stage unites the Chardonnay and Pinot Noir wines, resulting in a unique synergy. Tartaric stabilization and filtration complete this elaboration phase.
The journey continues with the inoculation of selected yeasts and bottling, marked by the Draft Liquor. The second fermentation inside the bottle itself takes place at a temperature of 12ºC, triggering a maturation process that extends for 60 months, promoting a rich autolysis of yeasts. The meticulous process of Remuage in pupitres guides the sedimentation of the yeasts, preparing for the great moment of disgorgement. At this time, the addition of the expedition liquor occurs, followed by corking and labeling, culminating in the creation of an effervescent masterpiece ready to be enjoyed. Each step, masterfully executed, contributes to the distinctive quality of this sparkling wine that reflects the dedication and artistry of the winemaker.

Clear and bright sparkling wine, straw yellow in colour. It has a fine and persistent perlage, culminating in a noble and imposing crown. Elegant and intense bouquet with notes of fruit in syrup, referring mainly to pear and apple. The aromas of buttery brioche and delicately toasted bread express the complexity acquired during the slow maturation of this sparkling wine. It reflects in a unique way the excellence of the Terroir do Vale dos Vinhedos in the elaboration of sparkling wines. The most rigorous selection of the best Chardonnays and Pinot Noirs, combined with a careful and slow elaboration process, gives rise to a sparkling wine with a unique character, with incomparable creaminess. Complex, it maintains a vigorous freshness, which supports its great intensity, finished off by a magnificent aftertaste, where the evolutionary notes are evident.
