Tasting Notes
Long-lasting wine, with the potential to age in the next century. This wine is deep amber in colour, with flavours of honey, dried fruits, figs and a spicy finish. On the palate it is creamy, rich, sweet and fresh, with citrus and dried fruit notes. It is full-bodied with a beautiful balance of sweetness and acidity. Perfect on its own, great with typical Tuscan biscuits called “cantucci”, extremely good with cured cheese, ice creams and fruit-based desserts.
Viticulture
The grapes are planted in a traditional way in holes in the ground and pruned short. The vineyard is located on a south-facing hill with clayey and partly rocky soil.
Vinification
The grapes are dried for two months before being pressed. The wort is fermented and aged for at least 3 years in typical wooden barrels called “caratelli”. The fermentation is extremely long and slow and allows the wine to acquire its characteristic notes.
