Tasting Notes
Greenish-yellow color, crystalline. Aromas of citrus, with subtle notes of pineapple. On the palate it is full of character, with well-integrated fruit, enhanced by freshness. It maintains the citrus aromas until the end, which are prolonged.
Vinification
Mechanized nocturnal harvest, total destemming followed by cold shock in a pasta exchanger. Gentle pressing preceded by static cold decanting for 48 hours. Fermentation in stainless steel vats with controlled temperature, with consequent aging on fine lees and batonnage for 6 months.
