Vinification
The grapes were harvested by hand, then passed through the sorting table before entering the gravity press. We collected 52% of the extraction and the fractions were meticulously separated. The must fermented in 600 and 300 litre French oak barrels of various uses, at a temperature of 14 °C, to obtain a fresh and elegant base wine with a firm structure, always taking care of the balance between aromatic expressiveness and tannin. Argent Rosé is aged in rhymes for more than 52 months. The process is completely handmade. We use natural cork stoppers, which favors longer aging. We use pulpitres for clarification. Stirring and disgorgement are also carried out manually.
Biodynamic Viticulture in the Vineyards
We practice the biodynamic management of the vineyards in order to obtain more expressive, concentrated and complex grapes. We seek to integrate the vineyards into a landscape where energy flows, vital forces are balanced, and the quality of the fruit maintains its excellence year after year. The vines have an average age of twenty-five years and are planted in cool, stony soil, with more than 40% lime content, at an altitude of 300 meters above sea level. They provide us with a very limited production, about 2,500 to 3,000 kilos per hectare.
Tasting Notes
It is golden with reflections of rose gold. It has floral aromas of rose petals and fruity aromas of cantaloupe melon. There’s also a touch of cherries. It highlights the citrus freshness of the grapefruit. Aging manifests itself with the aroma of puff pastry. The appetizer on the palate is creamy. The crisp, fully integrated acidity merges with a sustained acidity , and a mineral note closes the whole.
