Vinification
This Castelão liqueur is the result of intense work divided between the vineyard and the winery. The vineyard was monitored and pampered at all times so that yields did not exceed 1500 liters/ha and the grapes arrived at the winery in the ideal health and ripeness state. In the winery, a “proper” vinification was idealized for this product, different from what was usual in other companies in the region. It consists of an intense selection of bunches followed by a pre-fermentative maceration for 2 days, after that the fermentation is allowed to start very slowly homogeneously throughout the vat reaching 3/4 of the fermentation in 3 days, benefiting this wine with the best wine spirits available on the market selected by the company’s technicians, followed by a post-fermentative maceration of 6 long months.
Aging
The final stage is carried out in 225 liter French Oak barrels (used in a minimum of 6 wines), where it is concentrated. For this wine, the best barrels were selected.
Tasting Notes
Light topaz in color. With floral aromas, spices and evolution, in the mouth it is round, very soft and fresh, with a very long aftertaste.
