Vinification
50% of the grapes are harvested whole and 50% are destemmed. Cold pre-fermentation for 4 or 5 days, followed by the start of alcoholic fermentation under the influence of natural yeasts for 10 days, with temperature control. Pressing and maturation in French oak barrels for 15 to 18 months.
Tasting Notes
On the nose, Entrecœur harmoniously combines red and black fruits. On the palate, it is solid but without rigidity, fresh and lively.
