Vinification
Three different plots of the Disznókő vineyards intended specifically for this dry wine were harvested and vinified separately. Manual harvesting of fully ripe and healthy bunches began on September 16 for the western slopes, followed by the southern slopes on September 23 and 25. The grapes were harvested in small boxes of 20 kg. The grapes were pressed directly without destemming, allowed to decant for one night and then ferment in stainless steel tanks between 16-18°C. About half of the batches underwent malolactic fermentation.
Aging
The wine aged on the fine lees in stainless steel tanks for 4 months. Bottled in March 2021 in a 750 ml Tokaji bottle with glass stoppers.
Tasting Notes
Straw yellow robe. Very fresh and fruity nose with aromas of pear and ripe apple. Fresh and integrated acidity with a certain weight on the palate, with a pleasant texture and a touch of sweetness and minerality at the end (February 2021).
