Vinification

The 2020 hand harvest reflects an unwavering commitment to quality, where each bunch has been meticulously selected to ensure exceptional fruit. The 2018/2019 reserve wines, the result of patience and dedication, express the unique splendour of each year. After vinification, the wines went through a ten-month ageing in large oak barrels, adding complexity and smoothness. The decision to avoid malolactic fermentation preserves the purity of the fruity characteristics, providing a fresh and crisp profile. Each phase of this journey, from harvest to aging, reflects a commitment to excellence, creating wines that capture the authenticity of the terroir and the mastery of the winemaking process. Composed of 70% Pinot Noir and 30% Chardonnay, classified as Premier Cru and sourced from vineyards in Rilly-la-Montagne. In accordance with its Sustainable Viticulture and High Environmental Valorization certifications.

Tasting Notes

The pale color with traces of silver announces a predominance of Pinot Noir with excellent maturity. It is followed by a delicate effervescence. The fine, delicate and persistent bubbles will enhance the liveliness and elegance on the surface. The first impression on the nose is marked by great intensity. It will open up to a rich bouquet of pastries, with hints of honeysuckle, with enticing peppermint aromas. After opening, it is possible to feel notes of pear and peach syrup, increasing the intensity of this champagne. On the palate, there is a fresh and crisp attack of candied fruit. It reveals a beautiful balance between richness and tension with a complex structure. The bitterness of citrus fruits is perfectly integrated with other pastry flavors that remain present throughout the long, thin finish.
