Vinification
A blend of 25% Bisseuil Chardonnay, 70% Pinot Noir and 5% Pinot Meunier from Aÿ Grand Cru and Mareuil-sur-Aÿ Premier Cru. The base wine is from the 2008 vintage, along with 25% from the 2006 and 2007 vintages.
The final mixture was fermented in stainless steel tanks and aged on the lees for 48 months before disgorgement.
