Vinification
The grapes were carefully selected, destemmed and pressed. Fermentation took place in small stainless steel tanks at a controlled temperature (14°C) for 23 days. The wine benefited from a 6-month ageing in French Oak and American Oak, using batonnage, for 3 months
Tasting Notes
With soft straw tones, this is an aromatically intense wine with a marked complexity. The woody notes appear in an elegant way, with emphasis on almond, toast and caramel, but it is the grape variety that imposes itself, with stone fruit (loquat), some nuances of tropical, especially melon, and a bread, feeling like toasted warm bread. In the mouth it is fresh and elegant, with a harmony between salinity and minerality, which makes this wine intense, persistent and unforgettable.
