Tasting Notes
Brownish topaz color with golden straw tones. Complex aroma with dried fruits (nut), honey, spices, slight touch of wood. Balanced with soft tannins, sweet with a soft body and complex in the retronasal aromas that promote a prolonged finish of very pleasant aroma.
Vinification
Traditional winemaking without the use of sulphur dioxide. Fermentation at controlled temperature.
Wines with Alcohol Content 8.5 – 9.5 %; Fixed acidity 10.5 – 11 g/l
Distillation
Distillation in the months of October/November in an 18″ copper column type Armagnac. Neutral spirits with an average alcohol content of 72%
Aging
More than 5 years in rooms of National Oak (Q. pyrenaica), French Limousin Oak (Q. robur) and French Allier Oak (Q. sessiliflora)
