Vinification
The grapes are harvested by hand on the date of their best state of ripeness. Completely destemmed, they are lightly crushed and then pressed in order to obtain a fruity, balanced must, and good acidity. Fermentation takes place partially in French oak barrels, at a controlled temperature of 16-18º C, for 15-20 days.
