Vineyards
The soil of the vineyard, characterized by its platform of rolled pebbles, is poor in organic matter and has some calcareous outcrops at the highest levels. The continental climate of the region, with extreme temperatures, allows for a slow aromatic maturation of the grape, maintaining good acidity.
Vinification
After the harvest, the musts ferment in stainless steel tanks, concrete tanks and wooden barrels. In some wineries and depending on their acidity, there are signs of malolactic conversion. The wines remain in contact with their lees for 4 months. The final blend is what characterizes the uniqueness and differentiation of our José Pariente Verdejo wine.
Tasting Notes
In the visual phase, a bright straw yellow color is appreciated, with greenish reflections. Elegant, fresh and complex. It features a marked fruity undertone, which spans the range of white fruits and citrus. In addition, aromas of fennel, bush and a aniseed, balsamic background are noted. All this on a mineral reminiscence. In the mouth, notes of fresh fruit reappear. Unctuous, greedy and elegant, with a soft bitter finish, characteristic of the verdejo variety and supported by good acidity. It has a large structure that favors its persistence. The volume in the mouth of this harvest stands out. The retronasal is complex and intense.
