The wine from the “Mestre Daniel” range is DOC Alentejo certified and is the wine that best represents the tradition of amphora wine. Mestre Daniel (1923-1985) produced amphora wine for about 30 years in our winery, following the family tradition he inherited from his parents and grandparents. This wine, with his name, is a fitting tribute to our grandfather who, in addition to his winery, left us the wisdom and love of amphora wine. This wine thus represents this long local and family tradition of amphora wine production, which has been passed down from generation to generation in our village. The wine is produced by traditional methods and with typical grape varieties of the region.
Tasting Notes
Ruby colour. Red fruits and some jam. Dry, with some volume. Elegant and long aftertaste.
Vinification
Total destemming and slight crushing. Fermented with maceration and contact with the dough for three months in clay amphorae, without temperature control and with indigenous yeasts. It has not undergone any filtration or stabilisation process. Filtration occurs only through the passage of the liquid through the masses present in the hoist. It results from the batch of two amphorae, one with an approximate fermentation capacity of 1100 liters and the other with a capacity of 900 liters.
